Broiled Asparagus with Lemon-Basil Dressing
1 bunch of asparagus spears, trimmed
4 teaspoons of olive oil
kosher salt, to taste
black pepper, to taste
Dressing:
2 teaspoons of lemon juice
1/2 teaspoon of minced garlic
1 teaspoon of dried basil
1/4 teaspoon of dijon mustard
2 teaspoons of olive oil
2 teaspoons of parmesan cheese
2 teaspoons of crushed or slivered almonds
kosher salt, to taste
black pepper, to taste
1. Preheat the oven's boiler on high and set the oven rack 6 inche from the top.
2. Toss the asparagus and the next 3 ingredients together.
3. Spread on a baking sheet and broil in the oven for about 7 minutes, turning once halfway through cooking.
4. Prepare the dressing by whisking all of the dressing ingredients together in a small bowl.
5. Once the asparagus is done, place it on a serving plate and pour the dressing on top. Toss asparagus so that the dressing completely covers it. Serve! The asparagus is a still a bit crisp and definitely a bit tangy with a taste of yummy cheese. I think y'all will love it!

I am very funny about eating veggies! I am super picky, and amazingly that sounds so good to me! That means you really picked a winner if you can get me to get hungry reading a veggie recipe! I will have to try it!

ReplyDeleteAsparagus is probably my favorite vegetable and your recipe looks AMAZING!! I usually either steam it and add a little butter and parmesan cheese or roast it in the oven with sea salt and a little olive oil until it gets crispy. Yum, now I'm getting hungry.

ReplyDeleteMy favourite is white asparagus with sauce hollandaise: You have to beat 2 egg yolks, 2 tablespoons of water or soup, some salt and some lemon juice over steam until fluffy. melt 1/2 cup butter (it shouldn´t be browned) and add it gradually over verry low heat until it is thickened.
Delicious! Asparagus is my favorite too!! I will try this next time.
