Low Country Boil

Hello my darlings!! I hope ya'll had a fantastic weekend! I definitely did. Me and my husband had our first low country boil and it was a success! We had about 30 people show up, the food was delicious and the company was great. The only problem was that I momentarily forgot how to make instant rice while I was making the red beans and rice. Only I would fill a huge pot up with water, get it boiling, then dump in 2 cups of rice before remembering that you use same amounts of rice and water. I had about 6 girls in the kitchen helping me though so we got it worked out. I guess you could say "How many girls does it take to make rice?" I was having so much fun that I didn't take nearly enough pictures. I should have gotten some of my husband cooking the food in the big pots in the driveway, me and my friends having badminton, volleyball and ping pong competitions, the little ones, including my sweet puppy dog Ollie, all running around like crazy or even all the girls in the kitchen trying to figure out how to make rice...but you get in the moment having a good time and the camera is not on your mind. I did get a few pictures of the table though so ya'll can see!! I apologize for the horrible angles and blur. I was rushed to take the pictures so that everyone could eat.








We had corn, kielbasa, potatoes, crab legs, shrimp, red beans and rice, rolls...and for dessert, I made praline cupcakes with homemade whipped cream and candied pecans. They were actually pretty simple to make! I will do a post with the all the recipes I used. They were, in the words of my husband, "the best you ever made". Awwww...ain't he sweet? Here's a picture for ya'll so your mouths can be watering this morning!!

  4. yum and YUM! reminds me a bit of a NE clambake!! those cupcakes are adorable, and might be the perfect little bites to have at my derby party (after derby pie, of course)!

  11. All of that delicious food sounds amazing!! Beau T and I are thinking of having an "Open House" the weekend of our local reception (so I don't go anymore insane then I already am with the actual wedding planning..hehehehe) and a Low Country Boil sounds perfect!

    You MUST post the recipe for those cupcakes. I love pralines and I love cupcakes, so my mouth is watering over here!! :)
