Strawberry Fields Forever

Let me take you down, 'cause I'm going to strawberry fields! I don't know what my fascination has been lately with strawberries...but I want so bad to go wandering through a strawberry field with a little basket picking my own strawberries. I know there are places around to do that but I just haven't had the time or gotten the opportunity to do it yet! Have y'all ever done that?? It probably isn't all it's cracked up to be...but in my head it's the best thing ever.

One of my favorite scents from Victoria's Secret...Strawberries and Champagne. Yum.

And how do y'all feel about strawberry chicken salad?!?! Sounds delicious right? I think I'm going to have to try out this recipe very soon. 










Strawberry Chicken Salad




2 cups cubed cooked chicken breast
2 celery ribs, thinly sliced
1/4 cup chopped red onion
1/3 cup reduced-fat mayonnaise
2 tablespoons chutney
2 teaspoons lime juice
3/4 teaspoon grated lime peel
3/4 teaspoon curry powder
1/2 teaspoon salt
2 cups sliced fresh strawberries
4 Bibb or Boston lettuce leaves





In a large bowl, combine the chicken, celery and onion. In a small bowl, combine the mayonnaise, chutney, lime juice, lime peel, curry and salt. Add to chicken mixture and toss to coat. Cover and refrigerate for at least 1 hour.


Just before serving, stir in strawberries. Serve on lettuce-lined plates. Yield: 4 servings.



Nutrition Facts: 1-1/4 cups equals 222 calories, 9 g fat (2 g saturated fat), 61 mg cholesterol, 528 mg sodium, 14 g carbohydrate, 3 g fiber, 22 g protein. Diabetic Exchanges: 3 very lean meat, 1 fat, 1/2 starch, 1/2 fruit.

  1. I've been and ''picked my own'' a fair few times. (Strawberries that is!) It's good fun; you tend to eat more than you actually buy, although I'm fairly sure that they take into account that fact when they decide what price to charge you, lol!

    I have to admit that I'm not a fan of strawberry wine, but I do throw strawberries into a lot of the salad's I make, they're lovely.

  2. Love all of your strawberry images, and your recipe! So yummy! As for picking strawberries, I want to try it sometime too. I know W would love to go, she loves strawberries too. I'd have to get her a throw-away dress because I know she'd stain it all over if we went. But that's part of the fun! :)

  3. I love that song, but I've never had strawberry wine. Sad! I've gone and picked strawberries a couple of times, and it is pretty fun. I like to pretend I'm a pioneer woman living off the land ;)

  4. Yum! I'm making that chicken salad this weekend. We passed a strawberry field on our way back home from our trip this past weekend, but no one else wanted to stop but me. I'm totally with you. I've never picked them, but it sounds like so much fun!

    Oh, and thanks for the flashback to 9th grade. I used to lock myself in the bathroom and take bubble baths (most likely with Strawberries and Champagne from VS) listening to that song over and over. Haha!

  5. I took Colin strawberry pickin' last year and it actually was a lot of fun. We're actually talking about going this weekend. The taste is second to none so the effort is definitely worth it!

  10. I have never gone strawberry picking, but my mom & I are going blueberry picking soon, when the farms open!

  11. I'm lovin' that F21 necklace!! Bet it's only like 5 bucks too! Do you remember when LV had their strawberry necklaces? I think those were something like 500 bucks! I'll stick with the F21 one ;-)
